Ingredients
1 whole turkey breast Olive oil or melted butter
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon salt
1 teaspoon cayenne pepper (optional, for heat)
1 tablespoon brown sugar Wood chips (pecan, apple, or hickory for smoking)
For Alabama White BBQ Sauce
1 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon lemon juice
1 tablespoon prepared horseradish
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon sugar
1/4 teaspoon cayenne pepper (optional)

Instructions
Prep the turkey: Rinse and pat dry the turkey breast. Coat with olive oil or melted butter.
Season: Mix smoked paprika, garlic powder, onion powder, black pepper, salt, cayenne, and brown sugar. Rub this mixture all over the turkey, ensuring even coverage.
Prepare smoker: Preheat your smoker to 225°F.
Smoke the turkey: Place the turkey on the smoker grates, and smoke for 3-4 hours or until the internal temperature reaches 155°F.
Rest and slice: Once smoked, let the turkey rest for 10-15 minutes before slicing.
For Alabama White BBQ Sauce
Mix: Combine all ingredients in a bowl and whisk until smooth. Adjust seasonings to taste.
Chill: Let the sauce chill in the fridge for at least an hour for the flavors to meld together.
Assembling the Sandwich
Toast the buns: Lightly toast the sandwich buns or rolls for added texture.
Assemble: Spread Alabama white BBQ sauce on both sides of the bun. Layer with slices of smoked turkey followed by more BBQ sauce.
Serve: Serve immediately with extra Alabama white sauce on the side. Enjoy.
