Kebab Turkziki

Kebabs offer a colorful and tasty way to present a meal, and they’re simple to prepare. This means you can whip up a fancy-looking dinner in no time, great for when you’re in a pinch but still want to keep it classy.

It makes sense that so many cultures embrace kebab-style cooking. We’ve been throwing meat and veggies over an open fire for hundreds of thousands of years. Indian, Korean, Brazilian, South African … it’s safe to say that kebab cuisine is found on every continent. But of all my encounters with skewered awesomeness, the Greeks nailed it with their kebab renditions that are smothered in creamy tzatziki sauce. 

For this recipe, I skewer some seasoned wild turkey breast meat alongside some fruits and sweet peppers and then toss it all on a hot grill. Drop the finished products on a platter and smother the meat with my bastardized rendition of tzatziki for a real zinger. 

INGREDIENTS

1 wild turkey breast
Almond milk

Lemon

Fresh pineapple

Fresh strawberries (de-stemmed)

Sweet peppers

Kosher salt

Ground black pepper

Garlic powder

Ground turmeric

Spicy Tzatziki Sauce

Greek yogurt

Lemon

Avocado oil

Kosher salt

Green onion

Fresh dill

Jalapeno seeds

Instructions

  1. Cube turkey breast. Always start with a sharp knife!
  2. Submerge turkey breast in almond milk and juice from one lemon. Refrigerate 4-6 hours.
  3. Remove meat from fridge, drain and pat dry. Coat with seasoning blend: 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garlic powder, ½ tsp. turmeric.
  4. Skewer seasoned meat, pineapple, strawberries, and sweet peppers. (Keep each ingredient grouped on skewers for easier cooking control and timing.)
  5. Prepare spicy tzatziki sauce. Combine and mix: 1 cup yogurt, juice from one lemon, and 1 tbsp. avocado oil. Add to taste: kosher salt, minced green onions, minced fresh dill, and jalapeno seeds. (Remove jalapeno seeds if you don’t want spicy sauce.) Refrigerate.
  6. Grill skewers at 400 degrees until done. Recommended order of timing from longest to shortest grilling time: turkey, pineapple, sweet peppers, and strawberries. (Keep varied heat zones on grill for more control.)
  7. Serve with spicy tzatziki sauce over turkey; garnish with additional minced green onions.
