Wild Turkey Po-Tacos

It’s that time of the year where we are cleaning out the freezers to make room for new harvests. I want to share a recipe that came from my family wanting one dinner, but me wanting another: the Po-Taco!

This dish combines all the goodness of a taco with the fluffiness of a baked potato … that’s right, the baked potato is the taco shell.

Ingredients:

  • 1 pound ground wild turkey (or other game ground)
  • 2 tablespoons taco seasoning
  • 4 large russet potatoes
  • 2 cloves garlic, minced
  • ¼ white onion, chopped fine
  • 16 ounces refried beans
  • 2 cups cheese, shredded or sauce
  • 1 cup salsa
  • Jalapenos
  • Guacamole
  • Sour cream
  • Cilantro

Basic restaurant salsa:

  • 28 ounces crushed tomatoes
  • 1 white onion, quartered
  • 1 cup cilantro
  • 2 jalapenos
  • 4 cloves garlic
  • 1 teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon cumin

In a blender or food processor combine all ingredients and pulse until blended and a consistency you like.

Taco Seasoning:

  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ onion powder
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon sea salt
  • 1 teaspoon cracked pepper

Mix everything and store in an airtight container.

Instructions

  1. Preheat oven to 400 F.
  2. Wash potatoes, wrap in foil, place in oven and cook 1 hour or until internal temperature reaches 201-206 F. This is the ideal temp for a fluffy baked potato.
  3. While potatoes are cooking, work on your taco meat. In a skillet add 1 tablespoon cooking oil over medium-high heat. Add onions and sauté until translucent, about 4-5 minutes. Add garlic for 30 seconds more, just until fragrant.
  4. Add your ground meat and crumple, cook until no more pink is seen. Add your taco seasoning and ¼-cup cold water, stirring to combine. Reduce heat and simmer 5 minutes.
  5. Once potatoes are finished, remove from oven and unwrap. Make a slit down the center and push the ends together to open.
  6. Using a fork, fluff the inside of the potato and begin to build.
  7. Potato, beans, meat, cheese and toppings. This is the best part because you can be as creative as you’d like.
  8. Sit back, grab a fork and enjoy.
