Wild Turkey Alfredo Pizza

Pizza probably isn’t the first thing that comes to mind when you consider the possibilities of cooking wild turkey. But, heck, you often have to get creative to slap a tag on tom, so why not think outside the box when it’s time to pull the trigger in the kitchen?

In my younger days I was a burger-flipping punk, spending way too many hours choking on secondhand smoke in the galley of a shady sports bar. While our ground was hand-pattied gourmet, our pizzas were frozen. Despite the fact that I could eat anything during my shift–from prime rib to walleye–I’d often dig into those dirty little pizzas, adding extra fresh ingredients to make ’em my own. One of my favorite bases was a chicken alfredo pizza, and that’s the inspiration for the wild turkey version in this recipe.

Everyone deserves a lazy day and delivery pizza, but when you’re feeling more ambitious it’s easy to make your own pie. Don’t worry about the science and effort of hand tossing a crust. To me, that qualifies as baking, and I’m not a baker–nor a scientist. Lean into the wide variety of tasty pre-made crusts that you can find at the grocery store. If gluten makes you feel crummy, try a tested and trusted gluten-free cauliflower crust from the frozen foods section.

INGREDIENTS (serves 4)

1 wild turkey breast
Pizza crust (one large or two medium)

Fresh sliced mozzarella cheese (recommended: BelGioioso)

Shredded parmesan cheese
Cherry tomatoes

Red onion

Fresh basil

Kosher salt

Fresh ground black pepper

 

Sauce

Heavy whipping cream

Butter

Fresh garlic
Sour cream

Lemon

Kosher salt

Fresh ground black pepper

Instructions

  1. Always start with a sharp knife! Thin slice red onion and halve cherry tomatoes. Mince 4-6 garlic cloves. Chop fresh basil and keep refrigerated.
  2. Pound turkey breast with meat mallet to even thickness. Season with salt and black pepper. Let reach room temp.
  3. Grill turkey breast to approx. 155 degrees. Remove from grill and wrap in foil.
  4. While turkey is grilling, prepare alfredo sauce. Combine in sauce pan and stir over low heat: 1/2 pint heavy whipping cream, 2 tbsp. sour cream, 1/2 stick butter, 1/4 cup parmesan cheese, minced garlic, juice from 1/2 lemon. Salt and pepper to taste. Remove from heat and let thicken.
  5. Spread sauce evenly over pizza crust. Top crust with red onion, cherry tomatoes, and mozzarella cheese. Place on middle rack of 400-degree preheated oven, or in a convection-style pellet grill (not direct flame).
  6. Cook pizza approx. 5-10 minutes until cheese melts. Thin slice grilled turkey breast and add to pizza. Cover with parmesan cheese.
  7. Finish pizza on top rack of oven approx. 5-10 minutes to desired doneness. Keep a close eye to make sure it doesn’t burn!
  8. Garnish with fresh chopped basil before slicing and serving.
