Turkey Meatball Vegetable Soup

Ingredients

Soup:

  • 3 tablespoons oil
  • 1 yellow/brown onion, chopped
  • 2 celery stalks, chopped
  • 2 large carrots, chopped
  • 4 cloves garlic, minced
  • 1 cup corn
  • 1 cup green beans
  • 1 cup peas
  • 2 cans fire roasted tomatoes

Meatballs:

  • 1 pound ground turkey or other meat
  • 1 cup breadcrumbs
  • 3 cloves garlic, minced
  • ¼ onion, minced
  • 1 teaspoon salt and pepper
  • 4 cups broth, chicken or turkey
  • 2 cups V8 juice
  • 2 tablespoons cracked pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 tablespoons Worcestershire
  • 1 teaspoon paprika Salt to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 egg
  • ¼ cup milk

Instructions

  1. In a large stock pot or Dutch oven, add oil over medium-high heat; sauté onions, carrots, and celery until soft. Add garlic and cook for 30 seconds more.
  2. Add broth, V8, veggies, tomatoes and seasonings. Bring to a boil, then reduce heat to a simmer.
  3. In a glass bowl, add all meatball ingredients and mix to combine. Form meatballs and drop into your soup.
  4. Cook 1-2 hours until the meatballs are fully cooked. Serve and enjoy.
