Ingredients
Soup:
3 tablespoons oil
1 yellow/brown onion, chopped
2 celery stalks, chopped
2 large carrots, chopped
4 cloves garlic, minced
1 cup corn
1 cup green beans
1 cup peas
2 cans fire roasted tomatoes
Meatballs:
1 pound ground turkey or other meat
1 cup breadcrumbs
3 cloves garlic, minced
¼ onion, minced
1 teaspoon salt and pepper
4 cups broth, chicken or turkey
2 cups V8 juice
2 tablespoons cracked pepper
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoons Worcestershire
1 teaspoon paprika Salt to taste
1 teaspoon smoked paprika
1 teaspoon onion powder
1 egg
¼ cup milk

Instructions
In a large stock pot or Dutch oven, add oil over medium-high heat; sauté onions, carrots, and celery until soft. Add garlic and cook for 30 seconds more.
Add broth, V8, veggies, tomatoes and seasonings. Bring to a boil, then reduce heat to a simmer.
In a glass bowl, add all meatball ingredients and mix to combine. Form meatballs and drop into your soup.
Cook 1-2 hours until the meatballs are fully cooked. Serve and enjoy.
